Zucchini Butter Recipe

I was so excited when I first tried zucchini bread because it tasted like cake. Never in my dreams did I imagine that there could be a zucchini butter. Willy Wonka should look into zucchini because it clearly has serious delicious potential. This recipe can be used as a dip, spread or side dish and is courtesy of Newark Food Markets and Delawonderful.

Zucchini Butter

  • 2 
pounds zucchini or assorted summer squash (feel free to use less or add extra—cooking times will vary)
  • 1/4
 cup olive oil or butter
  • 2
 minced shallots, garlic, or combination of both
  • Salt and pepper

(Makes about 2 cups)

1. Coarsely grate the zucchini. Let it drain in a colander for 3 to 4 minutes or until you are ready to begin cooking. To hasten cooking time, squeeze the water out of the zucchini by wringing it in a clean cloth towel.

2. In a deep skillet, heat the olive oil/butter. Briefly sauté the shallots or garlic. Add the zucchini and toss. Cook and stir over medium to medium-high heat until the zucchini reaches a spreadable consistency, about 15 minutes. If you scorch the bottom, turn the flame down! (And scrape those delicious bits into the butter for added flavor—you can splash in a little water to help deglaze the pan.) The zucchini will hold its bright green color and slowly caramelize into a nice vegetable jam.

The Obvious Campaign

As a teenager in the ’80s, I remember laughing at the Just Say No anti-drug campaign. I remember thinking it was rude and that they should be teaching us Just Say No Thank You. I didn’t take the campaign very seriously, because even then I knew how hard it was for some people to just say no. There’s a whole set of behaviors that have to emerge before one just says no and those behaviors have to start with saying yes to difficult conversations.

The Medical Society of Delaware has launched an educational campaign for kids that focuses on seven “obvious” critical issues that affect young Delawareans and families:

Obesity
Bullying
Vaccinations
Intelligent Decisions
Opioid Use
Underage Drinking
Suicide

This initiative, titled “The OBVIOUS Campaign” encompasses teen, parent, and healthcare professional education presentations to the community and schools by experts on each of these focus issues. With such sensitive topics, these talks address questions such as: Where should the conversations begin? How should they be handled? Who should be doing the talking and who needs to do the listening?

“The Medical Society of Delaware wants to provide this important resource,” says Mark Thompson, external affairs officer for the society. “The goal is to increase the dialog on seven critical issues and make people aware, regardless of upstate or downstate, on the issues that affect youth today.”

The OBVIOUS Campaign, a brain trust of the society’s president, Dr. Steven Kushner, is being supported by additional community events in September such as a 5K and health fair. This fall, lectures will feature topics such as making wiser choices and facts about vaccinations.

Primary care physicians and mental health professionals are joining in Delaware to follow up on the “Just Say No” campaign of the ’80s. This time, it’s more like Just Say Now—the sooner we start talking about the issues, the better we can help cope with them. It seems so obvious.
