The Brick Hotel and Restaurant was a staple in the Georgetown community. Lynn and Ed Lester, who owned the restaurant for 10 years, decided this summer that it was time to retire.
Miguel Batiz and chef Bill Clifton—who opened Henlopen City Oyster House, The Blue Hen and Dewey Brewing Company—jumped at the chance to own a piece of history. The restaurant—now called The Counting House—opened Aug. 1.
“We specialize in bringing locally grown and caught food to our tables,” says Batiz. “Over 90 percent of our menu is sourced from within a few miles of our doors. You could call us a true farm-to-table [restaurant]. You can often find Bill at local farmers’ markets doing demonstrations and working hand-in-hand with farmers. His family is [made up of] fifth-generation farmers in the Milford area,” he says.
The restaurant serves lunch and dinner as well as Sunday brunch. There is also space for parties, social gatherings, networking events and weddings, including a rooftop terrace.
