Joe Slavinski celebrates the coming of spring with a cocktail that salutes mixology and music, which has been an essential part of Drift’s atmosphere since opening, he says. “In Bloom” is a Nirvana song from the band’s 1991 album, “Nevermind.” For the cocktail, Slavinski drew inspiration from a cucumber-and-sugar snap-pea syrup made by mentors in Boston. “I wanted to take that syrup that I loved so much—even with just some soda water—and turn it into a versatile cordial that allowed me to add other modifiers,” he explains. For In Bloom, other ingredients include Fords London Dry Gin; Dolin Génépy de Alpes, an herbal liqueur; Dolin Blanc vermouth; lime juice; a rosewater spritz; and a 20% saline solution that brings the flavors together. Plan to pull out your phone. The floral garnish running down the glass is Instagram-worthy.
