The new Sul Tempo Cocktail Lounge in Dover—an addition to the newly remodeled Roma Italian Ristorante—is playing with some different styles of cocktailing. Make sure to ask for the Smoked Plank, the brainchild of owner/chef Joe Garramone and mixologist Kristin McGuigan.
The cocktail-creation process is unique: First, a piece of cedar is torched; then, a glass is placed over the flame. The result is a smoky glass and a delicious aroma that flows through the new cocktail lounge. In a shaker goes Fifer Orchards apple-infused bourbon, cherry-infused bourbon, a splash of Apple Essence, a touch of sweet vermouth and burnt citrus bitters. The smoke-infused glass is rimmed with brûléed caster sugar, three drunken cherries are placed at the bottom and the shaken drink is poured in.
