Kapow, by Thai guy Norawit J. Milburn of Wilmington’s outstanding Ubon restaurant, is the next step in food truck evolution: more flavor, fresher ingredients. “We believe preparing the best ingredients in a natural and healthy way brings out exceptional flavor in all our dishes,” Milburn says. “Our menu includes flavors from Southeast Asia to Hawaii, and we do our best to serve up innovative dishes from both our food truck and catering kitchen.” The truck officially rolls out during a launch party at Famous Tim’s Tavern on April 19. Sample the food. Sample the sauces. Get a T-shirt. And if you were one of the crowd-sourcing funders, you can pick up your reward. “We are looking to change the dining lining landscape in Delaware by collaborating with other mobile vendors to build a strong community,” Milburn says.
