Jeanne Kress of Elkton has never been to Belgium. She just started perfecting her waffle recipe a year ago. And yet, one bite of Kress’s Belgian Liege waffle takes you to the narrow cobblestone streets of Bruges lined with stands, the aroma of fresh waffles filling the air. Her secrets? Pearl sugar and many hours of trial and error. “They’re authentic to Belgium,” she says. “I didn’t want to Americanize it.”
Kress plans to open her Belgian waffle and coffee shop, The Perfect Blend, in late spring, ideally in May. She’ll serve Pike Creek coffee along with her waffles—the regular sizes sold individually for $3.50 or mini-waffles sold by the dozen for $23—at her Main Street storefront located next to Quest Diagnostics on 249 E. Main St. Other menu highlights will include a Nitro coffee float and dozens of toppings such as bacon bits, Nutella and fresh fruit to add to your waffle.
Beyond waffles and coffee, Kress wanted to create a comfortable place where people can put their feet up and stay awhile. Along with two historical fireplaces, Kress will fill the space with couches, artwork from local artists and a piano.
