At Harbour, craft cocktail enthusiasts feel confident giving mixologist Rob Bagley creative license. As one customer put it: “I’ll take anything Rob wants to make.” Bagley cut his teeth at the original Bramble & Brine in Rehoboth before moving to Michy’s. Here, he changes the cocktail menu to suit the season. Right now, he is featuring Fifer Orchards Apple Cider. The Cider House Sour is an innovative cross between a Manhattan and a whiskey sour. The secret ingredient is Cocchi Vermouth di Torino, which boasts touches of vanilla and spice. Since Bagley is equally known for mocktails, he’s also whipped up The Spice Is Right, made with Seedlip Spice 94, a nonalcoholic spirit. Chai tea brings more depth of spice and aroma to the drink. When Bagley isn’t at Harbour, he’s concocting new creations or tending bar at the Developing Artist Collaborative’s West Rehoboth Creative Markets on Mondays. It’s easy to see why this bartender is the toast of the coast.
