Serves 1 salad
The Kale Detox Salad is one of the oldest recipes on Vavala’s blog. “It’s still a go-to because it tastes really good while providing a ton of healthy benefits,” she says. Each ingredient was chosen for its cleansing properties.
1 cup kale chopped into bite-size pieces
½ cup red cabbage chopped into bite-size pieces
½ cup broccoli chopped into bite-size pieces
½ cup tomato chopped into bite-size pieces
¼ cup carrots chopped or shredded into bite-size pieces
¼ cup chickpeas
1 tablespoon sunflower seeds
1 tablespoon pepitas
½ teaspoon sesame seeds
Add all of the ingredients to a big bowl and mix well.
Top with dressing*, if desired.
*Lemon Mustard Dressing
Add about 1 tablespoon of olive oil, ½ teaspoon of lemon juice and ½ teaspoon of mustard to a small container with a lid. Season with a pinch of salt and pepper. Shake it up, taste and adjust to taste.
