After a busy first year in Wilmington, Bryan Sikora and his La Fia restaurant team have outgrown their cozy space on lower Market Street. But with the opening of La Fia’s Bakery Annex at 823 N. Market St. this fall, Sikora and head baker Dominic Petruccelli can devote a 1,500-square-foot kitchen space to churning out La Fia breads, rolls and pastries, like cloudlike French gougères for the restaurant and a growing wholesale business. La Fia already delivers several bakeshop items to Southeast Pennsylvania faves like the Whip Tavern, Philter coffee shop and SIW Vegetables. Sikora hopes to grow his wholesale business in Delaware. “As of now, I drop most things off on my drive home at night,” he says. “But we do see the opportunity for more local deals.” (For the surprise ending to this brief, click here.)
