At Roma Italian Ristorante, A New Cocktail Lounge

After more than 40 years in business, Roma Italian Ristorante (3 President Drive, Dover, 678-1041) decided to reinvent itself with a modern-day bar. The popular restaurant opened Sul Tempo Cocktail Lounge in December in a reconstructed space that houses a black quartz bar that seats 16, two comfy couches and eight high-top tables. The room is connected to Roma but has a separate entrance, its own parking lot and extended hours. Patrons can order from a selection of small plates or from Roma’s full menu.

For Sul Tempo, chef Joseph Garramone is offering a variety of flatbreads ($6-$14) with toppings like seasonal roasted vegetables or broccoli rabe with extra virgin olive oil, roasted garlic, house-pulled mozzarella and balsamic vinegar; arancini (crispy fried rice balls) with roasted red pepper aïoli ($7); and a cheese board ($10) with artisanal cheeses, including varieties he discovered in upstate New York. Patrons can chase down their munchies with cocktails made with house-infused spirits, beer and wine. The lounge’s Italian name means “about time”—as in, it’s about time Dover had a place like this.
