Bardea Steak Prepares to Bring Prime Cuts to Wilmington

James Beard-nominated restaurant Bardea Food & Drink introduces a new steakhouse in this Delaware city’s downtown.

Have you heard the news? Bardea Food & Drink is bringing steak to the downtown Wilmington area in 2022 with its brand-new concept restaurant—Bardea Steak.  

Co-owners Scott Stein and Chef Antimo DiMeo announced in a press release that after two years of hearing from loyal customers about wanting a downtown steakhouse, they will give it to them.    

When it opens in early 2022, Bardea Steak will be a modern take on a classic steakhouse in a 5,000-square-foot space adjacent to Bardea Food & Drink, with an aesthetic by restaurant design group Stokes Architect + Design. The space will connect customers with natural elements such as fire, water and flora.

In regard to planning the menu, Stein and DiMeo are big believers in bending the rules—even breaking them—when it comes to traditional dishes. Creative foods are a big part of the original James Beard-nominated restaurant’s aesthetic, and the steak house will be no different.

DiMeo plans to cook most of his dishes over a custom-made open hearth that showcases live fire cooking as well as numerous dry-aged meats. A majority of his steaks will be cooked using the Koji dry aging process, in which steaks gets rubbed in Koji—any starchy grain inoculated with Aspergillus Oryzae—for 48 to 72 hours.  

Not only will the food be out of this world, but there will be an extensive wine list and a tableside cocktail cart, too.
