After a busy opening act in Wilmington, Bryan Sikora and his La Fia team are expanding their downtown dominion. The buzzy bistro celebrated its one-year anniversary in July, and had already outgrown its cozy space along lower Market Street that housed its bakery, restaurant and gourmet-to-go operations. But with the opening of La Fia’s Bakery Annex at 823 N. Market St. this fall, Sikora and head baker Dominic Petruccelli can devote a 1,500-square-foot kitchen space to churning out La Fia breads, rolls and pastries, like cloudlike French gougères. The annex won’t serve as a retail spot, but will supply the restaurant and La Fia’s growing wholesale business. La Fia already delivers several bakeshop items to Southeast Pennsylvania faves like the Whip Tavern, Philter coffee shop and SIW Vegetables. Sikora hopes to grow his wholesale business in Delaware. “As of now, I drop most things off on my drive home at night,” he says. “But we do see the opportunity for more local deals.” Scoop: A new Sikora restaurant is in the works—this one with a Latin theme.
