You know it as Pizza Pazza Bar & Grill. But there’s so much more to it than pizza that owner Alex Russo is considering changing the name. First, let’s get this out of the way: The pizza is exactly what you would find in Italy, with a simple crust of flour, salt, yeast and water, a rich sauce and slices of fresh buffalo mozzarella, baked in a wood-fired oven. The result: an ideal pizza. Russo perfected it 20 years ago while working in his hometown of Santa Maria di Castellabate. Lest you should think Pizza Pazza, on Union Street in Wilmington, is your basic slice shop, you should know the menu is dominated by traditional Italian entrées, such as the popular chicken piccante, organic salads and homemade pastas. “People who have been to Italy get it,” Russo says.
