Q&A With Betsy LeRoy, Owner of Pizza By Elizabeths

The Best of Delaware winner shares some of the secrets behind her success.

Pizza By Elizabeths has done it yet again. After winning Best of Delaware award more than 30 times since 1994, the restaurant can now add some more wins to its impressive record. This year, readers voted Pizza By Elizabeths best pizza and best restaurant in Greenville-Centerville, while editors awarded its salads.We caught up with owner Betsy LeRoy about Pizza By Elizabeths’ latest wins, and her experience at our annual Best of Delaware party.DT: Your restaurant has won Best Salads many times throughout the years. How do you come up with some of the amazing salad creations?
When we first opened in 1993, our only salad was field greens with our curried pecans and a choice of two salad dressings—balsamic and creamy Dijon. Then, after a couple of years, we decided: Why not offer any of our pizza toppings as salad toppings? We let people create their own, just like pizzas. It soon became obvious to us that people wanted us to make some decisions for them, so we came up with some salads using toppings that we selected for them. Our Greenville C.O.B.B. salad, for instance, is a riff on the original Cobb salad. Our Cobb stands for chicken, onions, bacon and blue cheese. Our specialty salads, like our curried chicken salad, have come from different employees we have had over the years who have great ideas. I think the most important thing, though, is using the best and freshest ingredients we can find.DT: For over 20 years, Pizza By Elizabeths has been named as a Best of Delaware winner. What is your secret to success?
I think the secret to our success has been mainly three things: having very high standards, keeping consistent in our food quality and service—but most importantly, having the best employees on Earth.DT: Did you attend the Best of Delaware party last year? What was your favorite part?
I did attend the party last year. My favorite part is trying all of the different dishes that restaurants are putting out currently. I also like seeing fellow restaurateurs and catching up with them.DT: Will you be at the party this year?
