The Kombucha Craze

Kombucha, a fermented tea, is all the rage these days, though it’s been around for centuries—and probably longer. If you’re wondering what it tastes like, head to the Delaware Local Food Exchange in Trolley Square. The small grocery, which features local, organic and pesticide-free products, has two kegs of certified organic, fair trade, locally made kombucha on tap. Pint, quart and half gallon growlers are also available for a one-time purchase, so you can get refills of the beverage that is flavored with local fruit and herbs. The effervescent brew, which proponents say has health benefits, is made by Baba’s Brew in West Chester, Pa. The Food Exchange currently has cranberry sparkly and rosy apple on tap.
