Who says nothing exciting happens in Delaware? Whoever those people are, they don’t realize that celebrity chefs are opening restaurants in the good ‘ol First State. In fact, a little less than two weeks ago, “Top Chef” star Fabio Viviani was in Pike Creek celebrating the long-awaited opening of Chuck Lager America’s Tavern.
Viviani owns the restaurant with Michael and Craig Colby (of The Colby Restaurant Group), who Viviani met a while ago through some restaurant consulting work.
“We had been in discussions for a year and a half and finalized the concept, with Chuck Lager being one of them,” says Viviani.
He says they spent some time scouting up and down the east coast to find the perfect location for the restaurant.
“We were looking for a suburban location with very good density with lots of kids that is accessible to a neighborhood restaurant,” says Viviani.
Viviani says the menu is very family-friendly. And although the chef is a native of Florence, Italy, he wanted to make sure the menu offered good, quality American food.
“Good food is good food. I own and operate over 30 restaurants and only half are Italian. Creating good American food is as simple as creating good Italian food,” he says.

He does have some favorite dishes on the menu already.
“The chicken marsala is going to be the best chicken marsala that you will ever have,” he boasts. He also loves the grilled cheese.
Chuck Lager America’s Tavern featured 24 beers on tap, a hefty selection of bourbon and some fun cocktails (try the Gin Lemonade). The food menu has something for everyone, including appetizers, salads, pizzas and pastas.
