Summer Berry Cobbler

This recipe, courtesy of chef Alex Schiff and sous chef Amanda Nichols from Cantwell’s Tavern in Odessa, is the perfect dessert to help you say goodbye to summer.

For the filling:

  • 5 quarts of fresh mixed berries (strawberries, blueberries, blackberries, raspberries)
  • 1/2 cup of cornstarch
  • 1 cup of sugar

Toss all of the ingredients together until fruit is coated, then portion equally into small dishes.

For the topping:

  • 4 ½ cups of all-purpose flour
  • 1 cup of sugar
  • 2 tablespoons of baking powder
  • 1 teaspoon of salt
  • 1 tablespoon of orange zest
  • 1 pound of cold butter, cut into small cubes
  • ½ cups of buttermilk

Place all ingredients except buttermilk into a food processor, and pulse for 30 seconds (or until mixture resembles the texture of cornmeal). Remove from food processor and, using a spatula, fold in the buttermilk until the mixture forms a loose, slightly tacky dough. Rip the dough into small bite-size pieces and cover the fresh berries. Bake at 300 degrees for 15 minutes or until dough is golden brown.
