Stuffed Sweet Potato (Recipe)

The Paleo approach typically doesn’t include white potatoes. Sweet potatoes, however, are generally accepted, partly because they contain so much fiber and antioxidants. Diane “V’ Capaldi, aka PaleoBOSS Lady, came up with this colorful dish.


Ingredients:

1 sweet potato
3 pieces bacon
5 medium Brussels sprouts
1 small-to-medium size uncooked burger
Kerrygold butter (optional)

Instructions:

Preheat oven to 350 degrees. Wash the potato and cook in the oven until it’s soft to touch, about 30 to 45 minutes, depending on size. Fry the bacon in a pan. Set aside, preserving the fat. Chop the Brussels sprouts and the burger to a desired size. Reheat the bacon fat and add the sprouts and the burger to the pan, cooking until done. Break up the bacon and add to the pan, cooking for about five minutes. When the potato is cooked, cut it down the center and mash both sides with a fork. Add a dab of Kerrygold butter, if desired, and fill the potato with all the ingredients in the pan. Serves one.
