The ramen craze has finally hit Delaware. And not the kind you lived on as college students. Tiny Ramen Kumamoto opened last May on East Main Street in Newark and is packing in noodle aficionados.
Chef Sam Ho, formerly of Zento Japanese Contemporary Cuisine in Philadelphia, manages the eatery, where slurping is encouraged and patrons yell “kae-dama” when they want extra noodles. There are different types of ramen, but, traditionally, the Japanese dish consists of noodles, meat, fresh vegetables and a rich broth.
When we visited recently, we started out with steamed pork buns and seaweed salad before delving into two heaping bowls of ramen. The tonkotsu ramen featured heritage Berkshire pork-bone soup with slices of tender roast pork, bamboo shoots, beans sprouts and thin straight white noodles. The miso ramen was an aromatic bowl of miso-paste soup, vegetables and yellow wavy noodles.
