The Underground Kitchen is returning to Wilmington. The Richmond, Virginia-based experiential dinner series recently launched its latest food tour, themed “Cast Iron & Comfort,” and will be in the city on Oct. 26. Underground Kitchen held its inaugural dinner in Wilmington this past August as part of its “The New Americana” tour.
The dinner series keeps the menu secret and the location is unknown until 48 hours prior to the event.

“Cast Iron & Comfort” is a nod to the culinary world’s long history of cooking in cast iron vessels. The first mentions in written history come from China and Japan way back in the 1100s. The metal was sturdy and helped protect what was cooking from direct flame; at the same time it allows food to cook evenly when managed correctly, according to a news release on the event.
After the profusion of non-stick, super-coated, “e-z-clean” cooking implements of the late 20th century, cast iron cookware and cooking techniques have seen a resurgence in the 21st century.
Underground Kitchen will illustrate how it can be taken to the next level. Event chefs will prepare a one-of-a-kind menu using modern techniques melded elegantly with this most traditional of cooking methods, according to a news release.
