Caribbean Vegan Meatballs Recipe

An intriguing alternative to your typical spaghetti topper.

Caribbean Vegan Meatballs

Ingredients for meatballs:

  • 2 ripe bananas
  • 1/2 cup finely diced onion
  • ¼ cup finely diced cucumber
  • 2 cloves garlic, minced
  • ¼ cup chopped bell pepper
  • 1 cup oats
  • ¼ cup chopped fresh basil
  • 1 teaspoon turmeric

Ingredients for tomato sauce:

  • 2 tomatoes
  • 1/2 sliced onion
  • 2 cloves garlic
  • 1 carrot, sliced
  • 1-inch piece of fresh ginger
  • 1 tablespoon parsley
  • 1 tablespoon coconut oil

Directions

Preheat oven to 350 degrees. Place all vegetables, oats, turmeric and basil into a mixing bowl. Add mashed banana and mix with your hands. If ingredients are not sticking together, add more banana. Roll into balls and place in a greased baking dish. Bake 10 minutes. Blend all Ingredients for tomato sauce in blender. Pour over top of meatballs and cover with foil. Bake another 15–20 minutes. Enjoy.

These are generally served with a cabbage salad and mashed green bananas. For mashed green bananas: Boil 2 green bananas until mushy (20-30 minutes) with a clove of garlic. Add butter or coconut oil, milk or coconut milk, salt and pepper and mash.
