Another hatching: Newark’s Chicken House opens in a second location.

Chicken House Charcoal Grill’s Seafood Ceviche

Nancy Pacheco used to drive 25 minutes from her home in Claymont to work at her popular Chicken House Charcoal Grill in Newark. Now she drives five. Pacheco opened a second Chicken House in August (1504 Philadelphia Pike, Claymont), where a new group of diners is discovering her delicious Peruvian cuisine. “I’ve been training the staff for five months,” Pacheco said just before opening day. “This isn’t food you just throw in the fryer.” The chicken, marinated according to a recipe developed by her husband’s family in Huariaca, Peru, 70 years ago, is grilled over natural charcoal. So is the beef and pork. The Chicken House also serves seafood a la several delicious ceviches. Sample the national drink, pisco, in cocktails or sours, as well as favorite beers like Cusqueña and Cristal, and South American wines. (793-1504, thechickenhouserestaurant.com)
