Fresh Cranberry Coleslaw (recipe)

This locavore recipe will have you whipping up a great seasonal dish in no time.

Cranberry Coleslaw


¼ cup mayonnaise or salad dressing
1 to 2 tablespoons honey
1 tablespoon vinegar
¼ cup snipped dried cranberries
5 cups shredded cabbage (one small head)

In a small bowl, stir together the mayonnaise, honey and vinegar. Add cranberries. Place the shredded cabbage in a large serving bowl. Pour the dressing over the cabbage and toss to coat. Serve at once or cover and chill for 45 minutes. Serves 8.
