Ginger-Garlic Seitan (Recipe)

SERVES 4

1 tablespoon of sesame oil
2 teaspoons of ginger,
   peeled and minced
1 tablespoon of garlic,
   peeled and minced
2 tablespoons of scallions,
   white part only cut into
   2- to 3-inch pieces
1/2 teaspoon of white pepper
2 teaspoons of soy sauce
1 teaspoon of Chinese
   5 Spice Blend
2 teaspoons of honey
1 pound of seitan, shredded
1 1/2 cups of snow peas,
   broccoli florets or sliced
   mushrooms, or a mix of all three

Over medium-high heat, sauté the garlic, ginger and scallions in sesame oil until they’re lightly browned. Do not burn. Add the white pepper, Chinese 5 Spice, honey and soy sauce. Stir to mix evenly. Immediately add the seitan. Cook for 2 to 3 minutes. Add vegetables and heat through. Serve over sprouted brown rice or baby spinach.
