Moroccan Salmon Cakes
Ingredients:
- 1 pound salmon
- 1 quart mayo
- 1-inch piece fresh ginger, grated
- 1 tablespoon cilantro, minced
- 1 tablespoon minced red bell pepper
- 1 tablespoon minced red onion
- 1 tablespoon curry
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 1 pinch cinnamon
- 1 pinch cayenne pepper
- 1 pinch ground clove
- Splash of lime juice (optional)
Directions:
First, trim the salmon bellies and tail pieces, and grind them down with a fine grinder so that they become similar to the consistency of ground hamburger meat. Add the mayo, curry, turmeric, cumin, cinnamon, cayenne pepper and ground clove. For extra flair, fold a splash of lime juice into the mixture. Then add the ginger and cilantro. Next, add the red onion and red bell pepper. Create patties of the ground salmon, then cook them in a skillet for about 10 minutes on each side. Enjoy!
