Ingredients:
- 16 ounces unseasoned Beyond Chicken or chopped, slow-roasted seitan
- 1 green apple
- 4 celery ribs
- 1/4 cup sliced almonds
- 1/2 cup golden raisins
- 1 teaspoon mild curry powder (give or take, depending on personal preference)
- 1/2 teaspoon sea salt flakes
- 1/2 cup Just Mayo by Hampton Creek
- 2 tablespoons mango chutney
Directions: Finely dice Beyond Chicken, apple and celery in 1/2-inch pieces. Dry toast almonds. Toss all ingredients together and serve in lettuce cups or on a salad.
