Palm Beach Salad Recipe

This delicious dish screams “summer.”

Ingredients:

  • 16 ounces unseasoned Beyond Chicken or chopped, slow-roasted seitan
  • 1 green apple
  • 4 celery ribs
  • 1/4 cup sliced almonds
  • 1/2 cup golden raisins
  • 1 teaspoon mild curry powder (give or take, depending on personal preference)
  • 1/2 teaspoon sea salt flakes
  • 1/2 cup Just Mayo by Hampton Creek
  • 2 tablespoons mango chutney

Directions: Finely dice Beyond Chicken, apple and celery in 1/2-inch pieces. Dry toast almonds. Toss all ingredients together and serve in lettuce cups or on a salad.
