Pan-Roasted Mediterranean Rice Makes for a Super Side (recipe)

Blend brown rice, asparagus, tomatoes and reduced-fat feta.

Pan-Roasted Mediterranean Rice


1 8.8 ounce bag of 90-Second Uncle Ben’s Ready Rice Original (or Whole Grain Brown)
1 pound fresh asparagus spears, trimmed (or 1 pound frozen asparagus spears)
2 cups grape tomatoes
½ cup crumbled reduced fat feta cheese
1 tablespoon olive oil
1 teaspoon oregano
½ teaspoon minced garlic

Heat oil in large skillet over medium to high heat. Add asparagus and cook for 3 minutes.
Add tomatoes. Cook 2 minutes or until asparagus is crisp-tender and tomatoes just begin to burst, turning asparagus occasionally with tongs.  
Place asparagus and tomato mix in a large bowl. Add feta, oregano and garlic. Turn gently to mix.  
Microwave rice as directed.
Serve asparagus mixture over rice or blend and serve.
