“I think we really try hard to be consistent and maintain our standards. People come to trust you,” says Betsy LeRoy, who, with partner Betty Snyder, is celebrating the 20th birthday of their gourmet Pizza by Elizabeths restaurant this year. From a modest room of 13 tables in Greenville in 1993, PBE quickly expanded into the space next door, until, in 2009, it moved to its present location, with 50 tables, a comfortable bar and lounge, and a takeout area, all while staying true to its roots and expanding its selection. You know PBE as the place where you can create your own pizza combos from a choice of crusts, sauces from tomato to mushroom duxelles, cheeses from mozzarella to fontina, and a wide range of toppings, some conventional, such as meatballs and pepperoni, and some not-so-conventional, like prosciutto, artichoke and figs. The two Elizabeths, friends and avid home cooks who shared their favorite recipes, got into the biz after Snyder let her kids make their own pies on the family’s traditional Friday pizza night.
