Rick Ewing makes a bold claim: His EagleWingz Chesapeake Style Hot Sauce is the only hot sauce made, bottled and shipped from Delaware. No matter. You’re in it for the flavor. The recipe of cayenne pepper, vinegar, mustard seed, celery seed, salt, black pepper, paprika, turmeric and garlic powder came together as “a little of this, a little of that” in about 20 minutes almost 25 years ago. Ewing’s sauce was so popular with friends and at his former R.C. Ribs restaurant, people pressured him to bottle it for sale. Three years ago, he finally ordered a case of bottles and labels, and EagleWingz took off. More than 17,000 bottles later, it has become the official house brand of his year-old store, Something Hot Specialty Sauces, in Seaford. Try it on chicken wings. “People just love flavor,” Ewing says. New flavors are rolling out, including Pineapple Teriyaki.
