Recipe: Spaghetti Squash-Wrapped Shrimp
After hundreds of views of spaghetti squash on Pinterest, I decided to try it. I was so nervous about how to handle the squash that I watched a YouTube video to help calm me down. It turned out to be incredibly easy to handle and outrageously delicious.
Our friends at Highland Orchards in Wilmington shared this recipe that combines my two favorite recipe requirements: easy and shrimp. I am a big fan of this healthy seafood and love the thought of eating “pasta” with shrimp without the carbs. Enjoy!
Ingredients:
1 pound shrimp, peeled and de-veined (about 16-20)
1 tablespoon salt
1 tablespoon white pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 medium spaghetti squash
1 tablespoon blended oil
Method:
Trim top and bottom of spaghetti squash. Cut in half lengthwise and scoop out seeds.
Rub halves with oil and put in oven at 350 degrees for 35 minutes, or until cooked through. Remove from oven and allow to cool.
Using a spoon, remove spaghetti squash from skin and season with salt, pepper, garlic, and onion powder.
Wrap each shrimp with a small amount of spaghetti squash and arrange on a tray and bake at 350 degrees for 12 minutes or until cooked through.
Drizzle with brandy shellfish butter and enjoy!

Christiana Launches Patient and Family Advisory Councils
To prepare for my holiday travel this past December, I consulted tripadvisor.com to read reviews about what hotels and restaurants my family should visit during our road trip. I was amazed at the types of issues customers highlighted in their reviews:
“I did not appreciate the particular shade of gray on the wallpaper,” and “You call that a swimming pool?”
I was especially impressed by merchants who responded to customer reviews—regardless of whether the review was positive or negative. I thought it said a great deal about their commitment to customer service because they were willing to engage in public online conversations with people who had visited their place of business.
Thanks to the Internet, comment cards are really an anachronism now. Customers know there is always a website or review board to visit to make their feelings known about a place or product.
One can imagine that if people have something to say about their hotel room experience, they would surely appreciate the opportunity to speak up about their healthcare. Many years ago, children’s hospitals across the country established their own family advisory board committees. These groups were designed for parents to help advocate patient and caregiver issues they experienced in the hospital and to help improve the process. Over time, hospitals that serve all ages have come to understand the value of that type of patient feedback and have improved patient care through this formal communication exchange.
Christiana Care launched its first Patient and Family Advisory Council at Wilmington Hospital in 2011. The success of this initiative led to the development of a council at Christiana Hospital in the fall of 2013 with 15 community members and 10 staff representatives. Members of this committee are patient and family volunteers who collaborate with Christiana Care to provide feedback on issues such as policies, programs, facility design and the overall patient care experience.
Eligibility for council membership is based on previous care experience of oneself or a family member, volunteer participation, ability to make a two-year commitment and thorough training on patient confidentiality and HIPAA standards.
Shawn R. Smith, vice president of Patient Experience at Christiana Care Health System, shared the goals of this type of formal collaboration and opportunity for feedback at the December initiative launch.
“The most important part will be getting the council members’ ideas and feedback to committees throughout the hospital,” Smith said. “Ultimately, our vision for the hospital councils is to have them completely run by our advisers and reporting up through a system-wide steering committee.”
On tripadvisor.com, one never knows if or how the responding manager will address the patron’s issue offline. It’s comforting to know we have hospitals in Delaware that address these issues, not only with patients in mind, but also with patients in the same room.
