Stock Up on July’s Peak Produce (with Recipe)

There are plenty of in-season fruits and veggies at your local farmers’ markets.

Yellow Tomato Gazpacho

With temperatures hovering in the 90s for much of this month, the perfect way to cool down is with a chilled soup. Try this Yellow Tomato Gazpacho from Abbott’s Grill in Milford. It’s packed with delicious, seasonal items and is served cold, making it the perfect soup for summer. For four servings, here’s what you’ll need:

For the soup:

4 ripe local yellow tomatoes, quartered
4 basil leaves
¼ cup white balsamic vinegar
1 ounce olive oil
Salt to taste

For the garnish:

½ cup seedless watermelon, large dice
¼ cup yellow tomato concasse
½ cup local cucumber; peeled, seeded and diced
2 basil leaves, chiffanade
1/8 cup small dice red onion
5–6 lumps of crabmeat
1 ounce olive oil
Salt to taste

For the soup, combine all the ingredients together in a blender—Abott’s Grill recommends using a Vitamix blender—until mixture is smooth and bright yellow. For the garnish, mix together all of the ingredients. Then add lump crabmeat and the watermelon mixture for a refreshing summer dish.
