Tuna Poke
- 1 cup cooked brown rice, served room temperature
- ¼ sliced avocado
- ¼ cup pineapple
- ¼ cup cucumber
- 4 oz. sushi-grade tuna
- 2 oz. poke dressing
- ¼ cup wakame (seaweed salad)
- Toasted sesame seeds
- A dousing of your favorite hot sauce (sriracha works well)
Other additions:
- Shredded carrot
- Kale
- Chili peppers
- Pickled shallots
- Mango
Dice all fruit, vegetables and protein. Mix in a bowl with dressing (recipe below). Pour over top of rice.
Poke Dressing
- ½ cup mirin
- ¼ cup rice wine vinegar
- ½ cup soy
- 1 cup lemon juice
- Salt
- 1/6 cup sesame oil
- 1/8 cup coconut oil
Combine in blender.
