Tuna Poke Recipe

A light yet satisfying weeknight option.

Tuna Poke

  • 1 cup cooked brown rice, served room temperature
  • ¼ sliced avocado
  • ¼ cup pineapple
  • ¼ cup cucumber
  • 4 oz. sushi-grade tuna
  • 2 oz. poke dressing
  • ¼ cup wakame (seaweed salad)
  • Toasted sesame seeds
  • A dousing of your favorite hot sauce (sriracha works well)

Other additions:

  • Shredded carrot
  • Kale
  • Chili peppers
  • Pickled shallots
  • Mango

Dice all fruit, vegetables and protein. Mix in a bowl with dressing (recipe below). Pour over top of rice.

Poke Dressing

  • ½ cup mirin
  • ¼ cup rice wine vinegar
  • ½ cup soy
  • 1 cup lemon juice
  • Salt
  • 1/6 cup sesame oil
  • 1/8 cup coconut oil 

Combine in blender.
