“Success means going to bed with a feeling of accomplishment and waking up excited for the day,” according to Shannon Colburn, director of operations for the Bluecoast Bethany and Lupo Italian Kitchen restaurants in the SoDel Concepts group.
In 20 years, she has worked her way up from host to director of operations. Colburn oversees all operations and finances of these businesses, including creating and following budgets, tracking costs, staffing, training, overseeing service and sometimes washing dishes. Colburn believes things have improved for women in the restaurant business.
“The restaurant workplace is always highly charged, and sometimes it is hard to keep things professional,” she says. “Years ago people—and in particular women—had to accept a certain level of discourse that was totally unprofessional and often was demeaning to women.”
