It’s been almost 37 years since Lois Margolet opened the first Capriotti’s and offered its now-legendary signature sandwich, The Bobbie, a pile of real roasted turkey—not cold cuts—heaped with stuffing and cranberry sauce on a sub roll. One innovation led to another—Capriotti’s was one of the first places to offer subs made with vegetable-based cold cuts—and that led from one shop to another to another to, now, more than 30 across the country. The Dover store was among the first few.
