Corner Bistro, Wilmington: Parmesan-Crusted Chicken

Before he married, owner Mickey Donatello wooed his intended with Parmesan-crusted chicken, a dish so good, it’s been on the menu at Corner Bistro since it opened. The winter version—a sautéed breast served with tomato-basil pesto—this month yields to the spring version: a panko-dusted breast  browned in good olive oil, then served with oven-roasted tomatoes and a basil chiffonade. Each chef adds his own touch, Donatello says. Sides likewise change with the season. Your mashed Yukon gold potatoes may become sautéed fingerlings.
