Chef-owner Patsy Ranking gets lots of culinary inspiration during annual month-long trips to the Florida Keys. One of the best: her crispy red snapper. The fish is prepared in a tempura-style batter with a light dusting of flour and secret seasonings, then scored so it will cook quickly in 350-degree oil. The fish is curved so that, even plated, it looks like it’s swimming on a bed of jasmine rice. Add sautéed shiitakes and a soy-ginger-garlic sauce to finish. “We really do use fresh snapper,” Rankin says.
