It might be difficult for diehard carnivores to comprehend, but there are diners who come to steak-centric spots for the fish, particularly if they don’t eat red meat but their companions do. This Pike Creek hotspot, a do-over of Dome that opened in 2010, is happy to oblige. Although the menu prominently features steak—all of which are aged up to 28 days—there are at least 10 non-beef offerings, including seafood dishes.

The “Mojo salmon” has cultivated a loyal following since the restaurant opened. The fish is glazed with a purée of jalapeno, cilantro, citrus and brown sugar. A dollop of cilantro aioli and a side of chipotle-mango black beans give the cold-water fish its south-of-the-border flair. Redfire also receives accolades for its catch of the day, which might come with a silky sweet potato purée, roasted fennel and a blackberry beurre rouge—a Merlot-infused sauce made with blackberry purée and finished with butter.
