At Soffritto, chef-owner Giovanni Panza’s fresh whole fish is a delicious meal and, fileted tableside, a great show. The fish of the day changes according to availability—we recommend the branzino when you can get it—but the two basic preparations remain the same: sautéed Mediterraneo style with fresh tomato and kalamato olives in white wine, or grilled with a drizzle of olive oil, a spritz of lemon, salt and pepper, as Panza personally prefers. Either way, the flavor of fresh pompano, red snapper, yellow tail and other fish shines through. Dover sole is always available for a special price on Wednesdays.
