We know, we know—nearly every other day seems like another silly national ‘holiday.’ (Case in point: July 27 is Take Your Houseplants for a Walk Day!) Admittedly, though, whenever one of these days centers around food, our ears—and taste buds—tend to perk up.

Metro Diner—which has locations in Newark, Middletown and, soon, Concord Pike—has officially declared Wednesday, Aug. 8, the first National Fried Chicken & Waffle Day. To celebrate, the restaurant will be serving up the decadent dish for just $9.99 (regularly $15.99).

According to Metro Diner, this dish has already been served over 250,000 times this year, and is on track to have been served half a million times by the end of 2018. Want to recreate it at home? Here are a few tips from the restaurant itself:

  • Use fresh (never frozen!) chicken.
  • Soak chicken in brine of your choice for 24 hours.
  • After brining, soak chicken in marinade of your choice for an additional 24 hours.
  • Fry chicken for 10–12 minutes on medium-heat heat.
